According to the FAO, Common buckwheat is used as a cereal but does not belong to the family of the grasses (where the common cereals, such as rice and wheat, belong) hence it is known as a pseudo-cereal. It is a good source of protein and is consumed in many different preparations depending upon local cultures. For example, the flour is used for making noodles in China and Japan, pancakes and biscuits in Europe and North America, porridge and soup in Russia and Poland, and unleavened bread chapattis in India.
The biggest increase in production between 2000 and 2016 was recorded in Russia, followed by France, Kazakhstan, Poland, Lithuania and Tansania. The biggest decline of production was recorded in China, followed by Ukraine and Canada.
Most of the world’s buckwheat is produced in Russia, where it is also an important part of the food tradition, followed by China, Ukraine, France and Poland.
